Lemon Meringue Cheesecake


 

INGREDIENTS

Crust 2½ cups graham cracker crumbs ⅓ cup sugar 6 Tbsp. Butter, melted cheesecake 4 (8 oz) packages cream cheese, room temperature 1½ cups granulated sugar 6 egg yolks (reserve whites for meringue) 2 Tbsp. Flour 1 cup sour cream 2 tbsp. Lemon zest (2 large lemons) Meringue filling 6 egg whites 1½ cups granulated sugar
 INSTRUCTIONS
Preheat the oven to 300 ° Crust Combine all the ingredients for the crust in a bowl evenly.
Press mixture into 9-inch springform pan and sides, about an inch. Bake for 10 minutes and let cool. Filling In a bowl fitted with a paddle, beat cream cheese and sugar until well combined and smooth.
Add the egg yolks and beat until the mixture is just combined, scraping the sides if necessary. Add the flour, sour cream and lemon zest and mix until smooth.

Pour the mixture over the prepared crust. Bake for 75 minutes. Then turn off the oven and leave the cheesecake in the hot oven with the door closed for 4 hours. Finally, remove it from the oven, run a knife along the edges to loosen it from the pan, and let it cool for 6 hours or overnight. Meringue filling Whisk 6 reserved egg whites with the sugar. Place in double boiler and, stirring constantly, heat the mixture until it reaches 140 ° on the candy thermometer. Immediately pour mixture into the bowl of a stand mixer fitted with a whisk and beat for 10 minutes, until stiff, shiny peaks form. Spread the meringue on the cooled cheesecake and lightly brown the top of the meringue with a cooking torch. NOTES If you want to amplify the lemon flavor in this recipe, you can add another tablespoon of lemon zest.   1. This a is not the same recipe printed on the advertisement with the beautiful picture. 1) the ads says short bread crumb crust 2) the ad calls for 3 pks cream cheese — not four. Why a double boiler for the egg white — meringue is not that hard to make. What's up the differences and unnecessary difficult steps???
